Study Break and Matzo Balls and Yom Kippur on Thursday..
In the midst of midterms I am thinking about how inconvenient that it is also the High Holy Days, and that my Yom Kippur, though I will get to go to services, will be perhaps lessened because of the commitments of schools.
Why do more than one thing at a time? Such is this life.
Also in this life is Matzo Ball Soup. Basic recipe:
Combine two eggs with two Tbs of oil, mix well and whip it up, add 1/2 cup Matzo Meal, 1/2 tsp salt, mix, if too thick add very little cold water. Put into refrigerator for about 10-15 minutes, while you boil broth: chicken broth with some carrots, celery and onions, a nib of ginger and a small bit of garlic, and pepper. After the matzo mix has rested in the fridge, wet your hands and make balls about an inch in diameter: drop the balls into the boiling soup one at a time, turn the soup down to medium for about 3-4 minutes, covered, then change to a simmer for twenty minutes or so, covered. Turn off the stove and let sit for another 15-20 minutes, garnish with some kind of herb and add some salt if it is needed!!
